Oatmeal cookies

Makes 5 dozen

¾ cup shortening
1 cup brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 tsp. vanilla
1 cup sifted whole-wheat flour
½ -1 tsp. salt
½ tsp. baking soda
3 cups oatmeal

Beat thoroughly the shortening, sugar, egg, water and vanilla in mixing bowl. Sift together flour, salt and baking soda; add to shortening mixture; mix well. Blend in oats and drop by the teaspoon onto greased cookie sheets. Bake at 350° for 12-15 minutes. Do not over bake.

Variety—add chopped nuts, raisins or currants.

I sift the flour once, then measure amount needed and sift the flour two more times with soda and salt. Makes a better cookie.
