Malt-O-Meal Pumpkin Muffins

These muffins are high in iron!

1 beaten egg
¾ cup milk
1 ¼ cup all-purpose flour
4 tbsp olive oil
¾ cup Malt O Meal cereal
1 tbsp baking powder
1 tsp. salt
1 cup pumpkin puree – not canned pumpkin pie mix

Stir ingredients until flour is moistened; do not
over mix. Bake 20 minutes at 400 degrees.
Makes 12 full-sized muffins, which freeze well.
