Not Your Regular Mashed Potatoes

Recipe submitted by Betsy M.

Instead of plain mashed potatoes try jazzing them up with any or all of these ideas:

Cook Potato Pearls as directed (1 cup Pearls to 2 Cups boiling water). As soon as you add pearls,
spoon in your favorite toppings. Ideas: garlic, sour cream, chives, cheddar cheese, bacon bits, etc.

If using wet ingredients like sour cream you may want to decrease water a bit or increase potato amount used. Experiment—these are a great hit with the kids.

So what can you do with potato pearls besides make mashed potatoes and listen to everyone talk
about “real” potatoes from scratch? Well they make a fast topping for Shepherds pie, or a good
base for Potato Soup.
