Wheat Muffins

Recipe submitted by April R.

4 cups whole-wheat flour
½ tsp. salt
2 tsp. baking soda
¾ cup brown sugar (or ½ c. honey)
1 ¼ cups milk (or 1/3 cup powdered milk + 1 ¼ cup water)
½ cup oil
2 tsp. vanilla
2 eggs

Mix dry ingredients together. If you use powdered milk, mix it with flour mixture. Combine liquid ingredients in separate bowl. Add to dry ingredients. Stir just until moistened. Spoon into greased muffins tins and bake at 350 degrees for 15 min. (you can add 3-4 mashed bananas or raisins)
